The prerelease build of Super Mario 64 showcased at the Shoshinkai 1995 expo contained a feature absent from the finished game: automatically regenerating health. In this footage, we can see that after taking fall damage and reducing his health to 4, Mario regenerates health at a rate of one unit every few seconds until it is 8 again. (Source)

In Super Mario World, it is possible to defeat Ludwig von Koopa extremely easily with a Fire Flower the following way: after entering the boss room, press R in the middle of the room to make the screen scroll right until Ludwig comes into view. This will cause Ludwig’s hitbox to activate, allowing him to be hit by Mario’s fireballs, but not his AI, resulting in him standing there motionlessly until he dies. In Super Mario Sunshine, Mario’s shadow is made out of overlapping circles. Most of the time, this is not too conspicuously different from a true shadow; however, swimming above a slanted surface reveals the loose nature of the shadow as the circles begin to come apart. Here, Mario is swimming in the Pianta Village hot spring. (Footage recorded by me in a GC emulator.)
