In the first trailer of Super Mario Sunshine shown in 2001, a realistically-proportioned human character appears for a brief moment as Mario runs past. This concept was quickly scrapped as no other Super Mario Sunshine beta content showed any trace of this character. Since Shigeru Miyamoto has stated that Super Mario Odyssey is a continuation of gameplay ideas from Super Mario Sunshine, it is possible that the realistic humans shown in the Super Mario Odyssey trailer are an attempt to bring back this concept.
In the Mario Party 8 minigame Snow Way Out, a Koopa can be seen waving from inside the cottage (top picture, window in the bottom left). However, the Koopa would be too tall to be properly aligned within the window if he was standing on the ground, as the frame would cover his eyes. To fix this, the game sinks him a few inches under the floor.

In the Super Mario Odyssey trailer, the people in black suits in New Donk City seem to dissolve when Mario approaches them. Note that the only people Mario has been shown to be able to approach closely in the trailer are people in gray suits, which could mean all people in black suits will have that property.
During a brief segment of the Super Mario Odyssey trailer, an object resembling a tendril or other moving appendage seems to disappear behind the trees to the left of Mario.
