In Super Mario Galaxy, performing a wall jump off the stairs before the final boss battle as Luigi in the way shown glitches up the cutscene. If you continue to Bowser, he will not be solid and won’t do anything except move his head. If you go backwards into the area you skipped, the cutscene plays, but freezes midway through.

In Super Paper Mario, changing from Mario into a different character before starting the Tilt Island minigame will make you control that character in the game. Bowser is much larger and slower than the others, so playing as him gets you no benefit whatsoever outside of being a self-imposed challenge.
