In Luigi’s Mansion 3, a map of the Last Resort hotel can be found near elevators and examined. Comparing the map to the way the hotel actually appears in-game, it becomes apparent that the two do not fully correspond to each other.
The in-game hotel has fewer visible floors than the map, with some being absent, like the Paranormal Productions floor (right above the greenhouse floor on the map, decorated with a studio light). Some visible fixtures are in different places; note that the dome on the right side of the hotel is near the top of the map, but near the middle of the in-game hotel.
In all, the map is much more accurate to the layout of the inside of the hotel, which suggests that the design for the outside of the hotel was created much earlier and simply not updated as the floor layout changed during development.

Top: in the Super Mario Maker series, the lava in the Super Mario Bros. style is animated, compared to the original game where it is a static image. However, the animation is relatively simplistic; the top layer of waves moves left while the bottom one moves right.
Bottom: there exists a more elaborate animation of the lava in that style, which can be seen in Super Mario Bros. Deluxe. Here, the waves change shape on each frame. Why this animation, which predates Super Mario Maker by 16 years, was not used in favor of introducing a new, lower-quality animation is unknown.

The Japanese version of Paper Mario has a different music track that plays during the “new partner” sequences that was replaced in all other versions. Here is the Japanese track, playing for one loop until 29 seconds in, where the international track plays for comparison.

In Super Mario Odyssey, Mario will briefly gain extreme speed if he runs on ice while being burned. There are few places where fire is located close enough to ice for this to be possible; the midway platform in the Underground Temple in the Sand Kingdom is the most easily accessible, as seen in the footage.

By performing a certain series of actions in Supermassive Galaxy in Super Mario Galaxy 2, it is possible to cause a Giant Piranha Plant to be invisible, leading to unique interactions.
If Mario loses a life after reaching the first checkpoint, then uses a Long Jump from the top of a Thwomp to reach the starting area again, the Piranha Plant in the pipe will not load correctly. It will be able to hurt Mario while invisible, and using a Spin Attack on it will cause bubbles to emerge from mid-air (top image).
Waiting near the invisible Piranha Plant will also eventually cause a fountain of dirt to come out of the pipe (bottom image). This will last indefinitely.
