In Super Mario Odyssey, through a very slow process, Chain Chomps’ chains can be extended infinitely.
Top: when capturing a Chain Chomp and continuously pulling on its chain, the chain will actually extend by a minuscule amount on each frame. Looking closely at the point where the footage loops, it can be seen very faintly that the Chain Chomp moved a very short distance.
Middle: this can be used to trap the Chain Chomp. After extending the chain enough to go over the small ledge (which takes 10 minutes of continuous pulling), releasing it will trap the Chain Chomp on the other side of the ledge with no way to get back up.
Bottom: in addition, looking inside the Chain Chomp’s mouth shows that one of its chain segments is inside, so that it is literally chomping its own chain.

Top: in 2014, a commercial for a special collection of New Nintendo 3DS cover plates featuring Japanese singer Kyary Pamyu Pamyu was released in Japan. This commercial is mostly known for featuring various Nintendo characters wearing original clothing designs (based on the cover plates being advertised), including a Mario outfit that later appeared in Super Mario Odyssey as the “Fashionable Outfit”.
Bottom: at one point in the commercial, a pink Bullet Bill with eyelashes appears briefly. It never received its own official artwork, unlike some of the other variant designs from the commercial. The Art of Super Mario Odyssey book provides a unique standalone image of this design, in a section about the inspiration behind the Fashionable Outfit.

In Super Mario Odyssey, as long as Mario is sitting on a bench, any Goombas touching him will become frozen in time, as seen in the footage.

In Super Mario Odyssey, there are large turnips in the Luncheon Kingdom that Mario can pluck from the ground and carry around. If a turnip is placed in a precise position next to a Hammer Bro’s respawn point so that, immediately after respawning, the Hammer Bro will land on it when Mario hits him with Cappy, a glitch will occur.
The moment the Hammer Bro touches the turnip, he will slowly begin ascending into the sky. He will ascend indefinitely, as shown in the footage on the bottom.

In Super Mario Odyssey, an unintended way exists for Mario to warp from the Dark Side of the moon to the Metro Kingdom.
In the Metro Kingdom, a bonus area containing the “Moon Shards Under Siege” Power Moon can be reached by capturing a taxi. This area is reused, with minor changes, for a Power Moon in the Dark Side called “Yoshi Under Siege”; however, when copying the area, the developers neglected to remove the loading zones at the ends leading back to the Metro Kingdom. If Yoshi is used to clip out of bounds and touch the loading zones, Mario will be transported back to the Metro Kingdom instead of the Dark Side.

In Super Mario Odyssey, a captured Fire Bro can only throw five fireballs at a time. If the button to throw fireballs is pressed while five of them are already out, the Fire Bro will simply wave his arm as though throwing a fireball, but no fireball actually coming out. Despite that action appearing to only be a visual indicator of the Fire Bro being out of fireballs, it actually has a hitbox.
If this is performed near a weak enemy, such as the Goomba in the footage, the Goomba will die despite the Fire Bro not actually attacking with a fireball and instead only waving his arm. This has the humorous visual appearance of the Fire Bro “slapping” the Goomba to death.
