In Super Mario Sunshine, it is very easy to accidentally clip into the floor at the waterwheel in Bianco Hills by pressing against the invisible wall underneath it (top). Mario will be able to walk normally while half of his body is below the ground while next to the waterwheel, but stepping too far away will result in Mario falling through the floor, killing him after he lands on the death barrier (bottom).

Officially licensed 2002 Super Mario Sunshine magnet set from Japan. The board the magnets are attached to uses high-quality artwork of Isle Delfino with the various locations using maps that are mostly accurate to their in-game appearance (zoom in to view).

In Super Mario Sunshine, spraying this Dune Bud in Gelato Beach and then performing a Ground Pound directly after it activates will result in Mario being shot extremely high up into the air. The camera will move up and then down to follow him, resulting in a brief unique view of the entirety of Isle Delfino as it moves down.

In Super Mario Sunshine, Pianta Village contains a tree that grows all five of the game’s different types of fruit. If the durian is taken down from the tree and brought close to its trunk, approaching the durian from a specific angle will result in Mario becoming stuck in a loop of kicking it and the trunk reflecting it back. This causes a large cloud of particle effects to be created, as seen in the footage.

In Super Mario Sunshine, Lava Cheep Cheeps appear on Corona Mountain. In-game, they are engulfed in flames and can only be seen from a distance (left), making it difficult to distinguish their features.
Extracting the model from the game (middle) shows that the Lava Cheep Cheeps have flower-shaped pupils. These are a reference to the Mexican holiday, Día de Muertos, where the dead are commemorated, and are often depicted with flowers in their eyes; suggesting the Lava Cheep Cheeps are already dead, which is why they are able to swim in lava.
The exact same reference and flower-shaped pupils were used later for the Tostarenans in Super Mario Odyssey (right).

In Super Mario Sunshine, some objects are not reflected in the lake in Bianco Hills, while some invisible objects appear only in the reflection. This footage shows both: the red and green spiky vine does not appear in the reflection, while the brown sphere appears only there.
The brown sphere is actually the spawning point of the Goop-covered Piranha Plants that roll down the path; it appears to have been coded to be invisible at some point in development, but the programmers overlooked the reflection, which was still visible.

This enemy, called “hinokuri” internally, appeared in the first trailer for Super Mario Sunshine, but is not encountered in the finished game. However, its data is still present in the game’s files and it can be loaded by modifying the code.
While loading it in nearly every level makes it appear with its head exposed, loading it into the Delfino Airstrip makes it appear with this skull-shaped mask. This suggests it was intended to appear at the airstrip earlier in development; possibly as the game’s first miniboss instead of the Proto Piranha in the finished game.

In Super Mario Sunshine, there is an ambient track of low-pitched sounds that plays on Corona Mountain, but at such a low volume it is extremely hard to hear over the area’s music that plays over it. Here is the track by itself, extracted from the game’s files.

In the underwater missions of Noki Bay in Super Mario Sunshine, using the Hover Nozzle makes Mario rapidly ascend. However, this is not how the Hover Nozzle works underwater when Mario enters water during regular gameplay.
The way this is accomplished is that Mario is given a special nozzle in those missions which allows him to rise quickly, and that nozzle replaces the Hover Nozzle until the mission is exited. By hacking that nozzle into regular gameplay, we can see it was never coded to specifically work only underwater, which allows it to be used in mid-air as well.
