Top: In Super Mario Odyssey, the Moon Kingdom and the Mushroom Kingdom contain small UFOs that fly away when Mario approaches, similar to the game’s many bird species. Here is a close-up of one of the UFOs.
Bottom: They are actually small versions of the Torkdrift boss from the Wooded Kingdom, having the same basic construction, but only one eyestalk instead of two. Just like Torkdrift steals flowers, the UFOs each have one small flower inside them.

Top left: In the Art of Super Mario Odyssey book, there is a piece of concept art for lava platforms in the Luncheon Kingdom that depicts the lava as having distinct beige swirls in it.
Top right: the texture from the concept art is in fact used in-game - only at a scale that makes it nearly impossible to see except from very far away. The swirls are extremely large so that playing the game normally, they appear to be simply areas of slightly differently colored lava.
Bottom: the only way they can be seen in-game is from the Floating Sky Island, which allows the entire kingdom to be seen at once. From here, the giant swirls can be distinguished.

In Super Mario Odyssey, there is a unique animation of Mario snapping his fingers when he is listening to the guitarist playing in the park in New Donk City. After the quest to recruit musicians is completed, there are no other places in the game where Mario would assume this animation and it can no longer be seen on the same save file.
One peculiarity of the animation is that Mario’s legs elongate when standing on the edge of the circular platform where the guitarist is playing (left: normal length, right: elongated). This was likely overlooked due to the animation being so limited in its use.

Concept art for Super Mario Odyssey, depicting Mario taking an elevator with a New Donker and two Goomba businessmen in the Metro Kingdom, found in the Art of Super Mario Odyssey book.
Note that there is a Chargin Chuck outside the window; their appearance in this kingdom was removed very late in development as materials from E3 2017 show “Chargin’ Chuck” written on the world map in the Metro Kingdom. This suggests that Goomba businessmen could have made it past the concept stage, but were taken out during development, as well.

In the Wooded Kingdom in Super Mario Odyssey, there is a very steep slope that Mario cannot normally walk up, and needs Rocket Flowers to climb. By strategically building a stair to that section using a Sherm, it is possible to bring a Goomba up to the slope.
This reveals that Goombas have a normally unseen interaction with slopes: if the player keeps shaking the Joy-Cons, the Goomba will quickly slide up the slope on one foot in the manner depicted.

In Super Mario Odyssey, capturing a Goomba in the ruins in the Sand Kingdom and then leaving the ruins and walking over to a Jaxi station reveals that the lamp post is afraid of Goombas and will say “Eeek!” when Mario approaches in this form.

In Super Mario Odyssey, Mario will briefly gain extreme speed if he runs on ice while being burned. There are few places where fire is located close enough to ice for this to be possible; the midway platform in the Underground Temple in the Sand Kingdom is the most easily accessible, as seen in the footage.

In Super Mario Odyssey, Mario will say random words while asleep. Unlike previous Mario games, where the number of possible phrases was less than 10, Super Mario Odyssey has 95 different sound files that are randomly chosen from. Here are all the phrases in sequence.
