Top: In the Japanese version of Super Mario Sunshine, the text on the signs found throughout Isle Delfino is in English. Although it is impossible to tell exactly due to the low resolution, there is a very high probability that the text reads:
This isn’t gonna
Just a little stick
Ready? 1…2…3.
There you All do.
Bottom: The source for the text appears to be an online English-to-Japanese dictionary (the phrase in question is highlighted). The Super Mario Sunshine version is missing a few words and letters, but otherwise is so similar that it is almost certainly taken from that source.
In Super Mario Sunshine, if after defeating Shadow Mario, Mario is positioned under the Shine Sprite in the manner depicted in the top image during its descent animation, then the resulting Shine Sprite collection cutscene will have Mario facing away from the camera, as seen in the bottom image.

In Super Mario Sunshine, Mario can be controlled on the file select menu, with the options menu being accessible by moving Mario to the right. In the file select menu, Mario does not sweat. No matter how much time passes, his idle animation consists of merely looking around. However, the moment Mario enters the options menu, he begins visibly sweating, and will continue sweating until exiting back to the file select menu.

Top: the first shot of the intro scene for Episode 8 of Ricco Harbor in Super Mario Sunshine, as seen during normal gameplay. Note the column to the right of the fruit container, near the right edge of the screen.
Middle: Using codes to zoom out the camera lets us see what would normally be covered up by the column. We can see that something falls down during the cutscene; it is positioned in such a way that the column obscures it from the normal camera position.
Bottom: Zooming in the camera onto the falling object reveals that it is a Pianta sailor who, for an unknown reason, spawns high above the fish market and then falls into his intended position during the cutscene.

In Super Mario Sunshine, looking closely at Yoshi’s neck when he is sticking out his tongue reveals that it is pinched to a very thin sliver. In fact, bringing the camera closer shows that the model deforms so severely that a hole forms in Yoshi’s neck, with his head only remaining attached to his body at two points.
