In the first trailer of Super Mario Sunshine shown in 2001, a realistically-proportioned human character appears for a brief moment as Mario runs past. This concept was quickly scrapped as no other Super Mario Sunshine beta content showed any trace of this character. Since Shigeru Miyamoto has stated that Super Mario Odyssey is a continuation of gameplay ideas from Super Mario Sunshine, it is possible that the realistic humans shown in the Super Mario Odyssey trailer are an attempt to bring back this concept.

In Super Mario Sunshine, jumping off Yoshi when his tongue is out results in a glitched state where Yoshi’s mouth is open and his saddle is floating above his back. In addition, Yoshi’s head can be controlled by moving the camera up and down.

In Super Mario Sunshine, fruits were added to fountains in Delfino Plaza by the  North American localization team. However, the fruit objects were never intended to spawn inside water by the original development team, as doing anything except for picking them up (such as spraying them with FLUDD) will cause them to immediately disappear.

In Super Mario Sunshine, a glitch will occur if a fruit is thrown into water at the same time that it disappears. If both a puff of smoke and a splash appear, the fruit will be invisible when it respawns at its normal location. When Mario picks it up, he will look like he is holding nothing.

In Super Mario Sunshine, Mario’s model was never intended to be viewed from an extremely close distance. After bringing the camera close to his face, it becomes apparent that Mario’s eye textures are positioned oddly, resulting in his irises clipping into his nose and bleeding onto his cheeks.

In Super Mario Sunshine, if Mario is hit by the flying enemies on Pinna Park Beach, his hat will be stolen and he will slowly lose health. This effect persists even in dialogue scenes, which makes it possible for Mario to run out of health while in the middle of a conversation with another character. Mario will perform his death animation, and lose a life once the other character finishes talking.
